In the attached image, you can see that I was able to bind a field to a data set, but the color does not appear to be rendering at runtime.

Sorry for the inconvenience! This option should not be present on the single select, it defines the background color of the tags when they are selected in the multi-select.

I think it would be great if the feature was completed.
Using the ‘Search with’ control, the resulting list supports coloring of the individual items…but that is probably programmed in a different way.
