Is there a way to hide the WeWeb toolbar header when in Preview mode, so as to get a mode accurate view of what the screen will look like once published?

You could hide it yourself within the devtools somehow, but as of now I dont think there is an option for doing this on WeWeb’s side. Would be a nice feature though
