I might be missing something, but I cannot seem to add a Column element after the Summer 2024 release. Was this deprecated?

It doesn’t impact your app or your editor. You’re free to use it as you like, but it won’t receive any updates other than bug fixes and it’s recommended to use grid from now on
To summarize, your columns will stay as they are
Is there a list of deprecated items? I swear there was a drop zone element but cannot find it now
