Add and remove item from variable array as video says it would

I am trying to add and/ or remove item in a saved job formula but for some reason even though i have copied it verbatim from a video Joyce did its still not working. this is what i have got

anyone any ideas?? i think its because they have a new select dropdown on the side but i have no idea as there is no documentation on this
